Delaware North is seeking an experienced Executive Chef to lead our Culinary Team at Etihad Stadium, one of Melbourne’s premium sporting and entertainment venues.

This high profile leadership role offers you the opportunity to review and shape the culinary offerings for our many stakeholders and guests. You will lead menu planning, design, inventory control, food & labour cost management, staff training and HACCP compliance for various culinary offerings and concepts across the entire site.

Key Responsibilities Include:

  • Reviewing, updating and executing the Culinary Business Plan
  • Overseeing the menu planning and sign off process
  • Driving and creating innovative food offerings
  • Overseeing all aspects of the culinary operations at Etihad Stadium including food preparation and production
  • Setting, implementing and reviewing service standards
  • Recruitment and selection of the culinary team – fostering a shared service focus with other venues in the Sportservice and Entertainment portfolio
  • Managing the performance and labour costs for all permanent and casual culinary team
  • Championing on-site food safety and HACCP compliance and accreditation
  • Providing a first-class dining experience to all guests at every event at the Etihad Stadium
  • Working with the Executive Chef and Culinary Team at Melbourne Olympic Park during major event periods and to deliver a best practice stadium Culinary Offer.

To be successful in this role you should demonstrate:

  • Significant experience managing a large culinary operation in a similar professional environment
  • Significant knowledge of commercial catering
  • Formal qualifications and certification including Certificate III or IV in Commercial Cookery and Food Safety Supervisor
  • Demonstrated experience in a la carte and high volume function environment
  • A passion for food and creative flair, clearly demonstrated through sophisticated and innovative menu planning and design
  • Solid knowledge of relevant federal and state legislation impacting upon the food, beverage and catering industry and workplace environments
  • Confident and collaborative communication and working style that encourages client, customer feedback and demonstrates a high level of professionalism at all times
  • Proven ability to manage, train and roster the culinary team in line with set budgets
  • Knowledge of online ordering systems and / or inventory control systems.
