Based at Melbourne & Olympic Parks, one of Melbourne’s leading sports & entertainment venues, we are seeking a talented Sous Chef to join our dedicated kitchen brigade.  You will be responsible for managing activities related to the production kitchens to achieve financial plan, profit margins and business growth, while building Delaware North brand and client reputation.

Experience & Capabilities:

The successful candidates will have proven experience in managing a culinary operation in a similar high volume environment whilst consistently achieving high standards of operational compliance. The successful candidates must also play a leading role in the areas of menu planning & design, inventory control, managing food & labour costings, report writing, staff training and development and ensuring compliance with HACCP.

To be successful in the role you should have:

  • Demonstrated experience in high volume function work in similar environment
  • Sound knowledge of commercial cooking and experience working in an industrial kitchen
  • Extensive experience in menu planning & design
  • Proven ability in managing, developing and motivating a diverse a team of chefs, cooks and stewards
  • Solid knowledge of relevant federal and state legislation impacting upon the food, beverage and catering industry and workplace environments
  • A passion for food and creative flair
  • Friendly and flexible disposition that encourages client and customer feedback and that demonstrate a high level of professionalism at all times
  • Availability to work nights and weekends according to business demands
