Delaware North is seeking an experienced Sous Chef to join our Culinary Team at Melbourne & Olympic Parks, home to the international Grand Slam - the Australian Open. This iconic venue is one of Melbourne’s premium sporting and entertainment venues.

About You:

The successful candidate will have proven experience in managing a culinary operation in a similar high volume environment whilst consistently achieving high standards of operational compliance. The successful candidate will play a role in the areas of menu planning & design, inventory control, managing food & labour costings, report writing, staff training and development and ensuring compliance with HACCP.

Key responsibilities include:

  • Manage the activities related to Kitchen operations to achieve financial plan, profit margins and business growth, while building Delaware North brand and client reputation
  • Lead and direct key staff in your team to deliver top-end functions that showcase Delaware Norths’s culinary leading edge. 
  • Ensure staffing activities and product quality maximises return on investment while managing the culinary operations within corporate and legal compliance guidelines

To be successful in this role you should demonstrate:

  • Ability to interpret profit and loss statements and implement actions to rectify outcomes.
  • Use financial information to adjust section business plans or make recommendations.  
  • Proven track record of controlling food and labour costs
  • Managing and leading a successful team of chefs, cooks and stewards
  • Coaching and developing others including, chefs and kitchen apprentices
  • Proven ability in cutting edge menu design, construction and costing
  • Knowledge of the logistics associated with the delivery of functions, in mass catering service environment
