Description

Based at the Sydney Cricket Ground, Sydney’s most historic sports & entertainment venue, we are seeking a Sous Chef to join our dedicated kitchen brigade looking after our prestigious Corporate Suites and Boxes.  

As the Sous Chef you will be responsible for managing all activities related to the Corporate Suites & Boxes kitchens to achieve financial plan, profit margins and business growth, while building Delaware North  brand and client reputation.  This is a hands on role requiring someone who is highly organised and with pedantic attention to detail.

Experience & Capabilities:
To succeed in this position you will have proven experience in managing a high volume culinary operation in a high end /fine dining environment whilst consistently achieving high standards of operational compliance.
The successful candidate must also play a leading role in the areas of menu planning & design, inventory control, managing food & labour costings, report writing, staff training and development and ensuring compliance with HACCP.

To be successful in the role you should have:

  • Minimum of 5 years experience in fine dining or a similar environment.
  • Sound knowledge of commercial cooking and experience working with
  • Sous Vide and production/ catering kitchens.
  • Extensive experience in cook/chill, and fine dining menu planning and design.
  • Proven ability in managing, developing and motivating a diverse team of chefs, cooks and stewards.
  • Solid knowledge of relevant federal and state legislation impacting upon the food, beverage and catering industry and workplace environments.
  • A passion for food and creative flair.
  • Friendly and flexible disposition that encourages client and customer feedback and that demonstrates a high level of professionalism at all times. 
  • Availability to work nights and weekends according to business demands.
  • An interest in sports – however small will increase job satisfaction

Qualifications:
Successful candidates must possess:

  • A trade apprenticeship.
  • A diploma or advanced diploma in commercial cookery.
  • A minimum of 4 years experience with exposure to HACCP regulations and controls.
  • Certificate IV Workplace Training and Assessment will be highly regarded as is any supplementary finance or complience based training.
