Delaware North Companies Australia provides catering and hospitality services at the infamous Sydney Cricket Ground (SCG) and Allianz Stadium. We are looking for an experienced Executive Sous Chef to provide leadership through coaching and a clearly defined culinary strategy to our kitchen brigade with a strong focus on corporate function preparation and delivery.

We seek an individual who has the passion and motivation to become a strong culinary leader at the venue and with current capability to oversee the full operation in the absence of the one up manager. Working with and reporting to the Executive Chef you will deliver the overall kitchen operation across two stadiums, with your key objective as delivering 'restaurant quality’ food to our corporate guests on each event whilst ensuring the kitchen department’s workforce achieve the agreed financial and operational performance objectives.

The successful candidate will have:

  • Drive, personality and passion for food that is evident, visible & contagious
  • A successful track record of managing large-scale function kitchens (venue/event experience will be highly regarded)
  • Experience managing a large kitchen team including getting high productivity levels from a transient casual workforce
  • A clear understanding and experience with a systems based approached to food production
  • Competence in using business technology such as email, stock control systems, spreadsheets, accounting systems
  • Strong organizational and administrative ability
  • A proven track record in controlling a department budget: primarily labour and food costs
  • The ability to recruit, train and coach a team
  • Adequate knowledge of best practice food safety practices ideally with HACCP accredited environment.
